Ok you gotta try this. No really. Even if you're a guy with zero experience you can make this.
Take a large cast iron frying pan. Squish up about 1/2 - 2/3 cup butter in the bottom. Just cover with brown sugar. Peel, quarter, core and thiny slice 3 or 4 cooking apples. Dump into a container with the juice of oen lemon, swish them around. Separate 4 eggs; beat the whites in one bowl. In another bowl beat the yolks till lemon yellow and add 1 C milk, 1/4 C melted butter, 4 T sugar, 3/4 t baking powder, 1/3 t salt and beat. Optional: one capful vanilla or almost extract. Slowly add 1 C flour, a little at a time. Stop to add a little flour, add it, beat, stop etc till it's all added. Dump the lemon/apple mixture into the frying pan , flatten it out. Sprinkle with a generous amount of cinnomin and a touch of cloves. Add currants to taste. Dump the batter on top then stick it in the oven for 20-30 minutes at 350 until a fork stuck in the center comes out easily. Let it sit for 15 minutes then run a knife around the outside of the thing in the pan. Put a plate on top, turn the whole mess over and it should flip out easily onto the plate. |
